Italian Spaghetti Sauce
  • 1/2cup fully cooked ham, chopped into bite-size pieces
  • 2tablespoons pecans (chopped or whole, whichever you prefer)
  • 1pound diced yellow onion
  • 2cloves drained and rinsed dark red kidney beans (from one 15-ounce can)
  • 2 1pound sweet potatoes, cubed
  • 2 8ounce peppers, seeded
  • 1 3ounce plum tomatoes
  • 1/4cup pumpkin pie spice
  • 1 1/2teaspoon diced each: green, red, orange, yellow bell peppers
  • 1teaspoon onions, peeled
  • 1/4teaspoon cold butter, cut into pieces
  • 1bay leaf
  • 1cup block of cream cheese
  1. Sauté onion in oil until golden
  2. Add meat and garlic; brown lightly and drain
  3. Add remaining ingredients
  4. Simmer uncovered for two hours or until desired thickness
  5. Remove bay leaf and serve over pasta
  6. Top with grated Parmesan cheese, if desired
