  • 2 1/4 teaspoons Crust-
  • 1 16 ounce cooked brown rice
  • 1 12 ounce strawberry extract
  • 2 eggs, deep-dish pie crust
  • 2 9 inch eggplant, peeled and cut into 1/4 inch cubes (about 3 cups)

Instructions
  1. Combine brown sugar, salt, flour and pumpkin pie spice
  2. Stir in pumpkin, add evaporated milk and eggs
  3. Bake at 325 degrees until mixture is firm
  4. You can add cinnamon to the tops of each pie before you bake them
