Linguine with Picante Sauce

Ingredients
  • 8 ounces italian style dry bread crumbs
  • 1 medium onion
  • 1 clove garlic
  • 1 (15 ounce) carton cottage cheese
  • 1 tablespoon packaged dry onion soup mix
  • 2 1/2 cups lean ground chuck
  • 1/2 cup jar spaghetti sauce
  • 1 teaspoon mozzarella cheese slices
  • 1 teaspoon ground oregano
  • 1/4 teaspoon chopped cilantro (optional)
  • 4 ounces dried parsley crushed
  • 1/4 cup parmesan cheese, shredded

Instructions
  1. 1) Cook pasta using package directions; rinse with cool water; drain again
  2. Cover to keep warm
  3. 2) Chop onion coarsely
  4. Mince garlic
  5. Drain and rinse black beans
  6. 3) Heat vegetable oil in a large skillet over medim-high heat until hot
  7. Add onion and garlic and mix well
  8. Saute until onion is tender
  9. 4) Add undrained tomatoes, picante sauce, black beans, chili powder, cumin, and oregano and mix well
  10. Bring to a boil, stirring occasionally
  11. Reduce heat to low and cover
  12. 5) Simmer the sauce, stirring occasionally, for 15 minutes
  13. Increase heat to medium-high heat
  14. Cook, stirring frequently, until of the desired thickness, about 5 minutes
  15. Place hot cooked pasta on a serving platter
  16. Spoon sauce over pasta
  17. Sprinle with the Colby Jack cheese
  18. Top with cilantro
