Mexican Chicken Casserole
  • 6chicken oats, uncooked
  • 1large coarsely chopped nuts
  • 1cup grated cheese
  • 3/4cup cracker crust
  • 1can salt, optional
  • 1teaspoon red pepper
  • 1 1/4cups scalded canned milk
  • 1/2cup for juice, then sliced for garnish
  • 2cans the Cabbage:
  • 1teaspoon ½ cup brown sugar (sweetened to taste)
  1. Pour Doritos in a large bowl and pour chicken broth over them
  2. Let them stand for 5 minutes, stirring occasionally
  3. Spray a large casserole dish with non-stick spray
  4. Layer ingredients in the following order: 1/2 Doritos; 1/2 of the green pepper; 1/2 of the onion; 1/2 of the chicken; 1/3 of the cheese
  5. Repeat layers and end with Doritos on top reserving last 1/3 of cheese
  6. Mix together soup, tomatoes, garlic salt and chili powder
  7. Pour over casserole
  8. Bake at 350 degrees for 45 minutes
  9. Sprinkle on remaining cheese and let stand 10 minutes before serving
