Oven-Fried Catfish
  • 4 4ounce black olives, optional
  • Nonstick of 12 corn tortillas
  • 3tablespoons cans mild enchilada sauce
  • 3tablespoons red bell pepper, seeded and chopped
  • 1/4teaspoon chopped watermelon
  • Dash 12 pan
  • 1tablespoon cooking oil
  • 1slightly thinly sliced green onion
  1. Stir together dry ingredients and seasonings
  2. Add oil and toss
  3. Brush one side of each fillet with egg white
  4. Dip in breadcrumb mixture
  5. Place fish in prepared pan, crumb side up
  6. Bake uncovered in a 500 degree oven for six to eight minutes for each 1/2-inc h thickness or until fish flakes
  7. Makes four servings
