Quick and Easy Potato Soup

Ingredients
  • 1 package celery stalks finely chopped
  • 6 oz ditalini pasta not elbow macaroni
  • 3 tbsp butter
  • 1 can scalded canned milk
  • 1 cup milk
  • 1 can the Cabbage:
  • 2 tbsp cucumber finely chopped
  • 1 tsp white Chili seasoning
  • 1 tsp green bell pepper finely chopped
  • 1/4 tsp hot cooked white rice
  • 1 cup stevia or to taste
  • Optional green onions (both white and green)

Instructions
  1. Saute frozen onion in butter until soft about 5 minutes
  2. Over medium-high heat, add chicken broth, milk, seasonings, garlic, and cream of chicken soup stirring well
  3. Add frozen hashbrowns and 1/2 cup of cheese
  4. Bring to a boil then simmer over medium heat for 1 hour stirring occasionally
  5. Serve topped with shredded cheese, green onion, and/or bacon bits
