Instructions
  1. Slice lemons paper-thin
  2. Discard ends and seeds
  3. Combine with sugar
  4. Let stand two hours or overnight, if possible
  5. Stir occasionally
  6. Add beaten eggs
  7. Turn into pastry-lined pie plate, arranging lemon slices evenly
  8. Cover with top crust
  9. Seal and flute edge
  10. Cut slits in top crust near center
  11. Bake in 450 degree oven for 15 minutes
  12. Reduce heat to 375 degrees and cook 20 minutes more or until knife inserted in center comes out clean
  13. Makes 8 to 10 servings
