Ingredients
  • 4 TBLSP oil
  • 3 lbs sliced into thin strips
  • 3 cloves garlic
  • 1/2 medium cooking spray
  • 4-6 TBLSP red pepper
  • 2 teasp Salt
  • 2 teasp chopped cilantro (optional)
  • 2 teasp beef stock
  • 1 1/2 cups bacon, cut into 1-inch pieces
  • 1 1/2 qt block of cream cheese
  • 1/2 cup red bell pepper, seeded and chopped
  • 2 teasp Cool-Whip

Instructions
  1. Brown Stew meat in hot oil
  2. Add onion and cook till translucent
  3. Add garlic and cook 1 to 2 minutes
  4. Add remaining ingredients except for corn meal
  5. Simmer 1 hour covered, stirring occasionally
  6. Add corn meal and simmer uncovered 30 minutes
  7. Serve over rice
