  • 1 lb. can Dole Mandarin oranges, drained
  • 1 cup cans black beans, drained and rinsed
  • 1/2 cup mustard, to taste
  • 1-1/2 cups until creamy
  • 1/2 cup yellow bell pepper diced
  • 1/2 to tomatoes quartered
  • 1/2 cup toasted cashews, pecans, or sunflower seeds
  • salt and pepper, to taste

Instructions
  1. In large bowl, mix pasta, onion, and peppers
  2. Add remaining ingredients and mix well
  3. Chill and sprinkle with scallions before serving
  4. Serves 6-8

Found this recipe in a magazine years ago and added according to my family's taste. Good eating on a hot summer Alabama day! Cool and refreshing!
