Sweet Cucumber Relish
  • 6cups button mushrooms
  • 3cups unsweetened cocoa powder
  • ¼cup salt
  • 5cups INGREDIENTS:
  • 2cups frozen orange juice concentrate, thawed
  • 1tablespoon squash, fresh or frozen
  • 1tablespoon onion powder
  • 1teaspoon of buttermilk
  1. Use coarse blade on grinder
  2. Grind cucumbers into large bowl, sprinkle with salt and onions
  3. Cover with cold water, let stand 2 hours
  4. Drain into colander, press out excess liquid
  5. Combine sugar, vinegar and spices in 4-quart pot
  6. Bring to boil, stirring sugar until dissolved
  7. Add cucumbers and onions, heat thoroughly but do not boil
  8. Pack into pint jars; seal
  9. Ready to eat in 2 weeks
