Chicken Tacocados

Ingredients
  • 3-4 avocado
  • 1/2 Lime juice
  • 2 Tbs olive oil
  • 1/2 cup red pepper seeded and diced
  • 1/2 cup green pepper seeded and diced
  • 1/2 cup onion diced
  • 2 cloves garlic pressed or grated
  • 2 tsp ground cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 Tbs sazon seasoning
  • salt and pepper to taste
  • 2 Tbs flour
  • 1 cup chicken stock
  • Toppings: Cilantro, lettuce, tomato, jalapeno, black olives, cheese, sour cream, pico, salsa
Instructions
  1. Heat olive oil on medium high and saute onion and peppers until almost tender.
  2. Add garlic and stir.
  3. Add spices and stir.
  4. Add ground chicken and salt and pepper. Stir and cook thoroughly.
  5. Add flour and stir until chicken is coated.
  6. Stir in chicken stock.
  7. Reduce heat to medium. Simmer for 15 min.
  8. While chicken simmers, cut avocados in half and remove pit. Use 3-4 avocados depending on how stuffed you like them.
  9. When chicken liquid is gone from chicken mixture, stuff avocados.
  10. Squeeze lime juice over top of chicken.
  11. Add your favorite taco toppings.
