Instant Pot Cajun Sausage, Potatoes and Green Beans

Instant Pot Cajun Sausage, Potatoes and Green Beans
  • 3/4 cup chicken broth
  • 1 12 oz package cajun style andouille sausage
  • 2 pounds red potatoes
  • 2 16 oz frozen green beans
  • 1/2 pound fresh mushrooms
  • 3 tsp Cajun seasoning
  • 3/4 tsp salt
  • 1/2 tsp & Pepper
  • 4 Tbsp saled butter
  1. Pour chicken broth into Instant Pot.
  2. Cut sausage into thin 1/4″ slices.
  3. Cut potatoes into 1″ cubes.
  4. Cut off the ends of the frozen green beans.
  5. Chop and add mushrooms.
  6. Add the sausage, potatoes, green beans and mushrooms to the Instant Pot.
  7. Sprinkle the cajun seasoning, salt and pepper into the pot. Toss with a spoon.
  8. Cut the butter into 8 pieces and toss them into the pot.
  9. Cover the pot and secure the lid.
  10. Be SURE the valve is set to “sealing”.
  11. Set the manual/pressure cook button to 3 minutes. (it might take 15-20 minutes for the pot to come to pressure)
  12. When the timer is up, perform a quick release by moving the valve to venting. Remove the lid when you can
  13. . Gently stir the contents of the pot. Scoop onto serving plates or bowls and enjoy! (May be served with or over rice)
