Silky Chocolate Mousse Pie

  • 1 cup almonds
  • 1 cup pecans
  • 1 cup dates pits removed
  • 12.3 ounces silken tofu
  • 1/2 cup cocoa powder
  • 1/2 cup pure maple syrup
  • 1/4 cup applesauce
  • 1/4 cup almond milk
  • 1/4 tsp salt
  • 2 Tbs dark choocolate shavings
  • In a food processor, place almonds, pecans, dates, and 1/4 teaspoon salt. Process until a coarse, sticky dough forms.
  • In a pie pan, press dough evenly along the bottom and up the sides.
  • In a high-speed blender, blend tofu, cocoa powder, applesauce, maple syrup, milk, and salt until completely smooth.
  • Pour filling into the crust and spread out.
  • Refrigerate overnight.
  • Sprinkle chocolate shavings on top.
  • Serve and savor!

Most holiday desserts use dairy products. I like to prepare this pie, so my vegan friends won’t feel left out.  It’s seriously heavenly.
