Squash Casserole

  • 1 1/2 cups cooked squash
  • 2 tablespoons parsley
  • 3 tablespoons butter
  • 18 saltine crackers crushed
  • 2 eggs beaten
  • 1/4 teaspoon red pepper
  • 1-3 tablespoons onion chopped
  • 3 tablespoons pimento chopped
  • 1 cup cheese grated
  • 1 cup milk scalded (1 min or more in microwave)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  1. Combine cooked squash with other ingredients.
  2. Spray casserole dish with cooking oil before adding.
  3. Bake at 350 for 40 minutes.
