Really Good Pimento Cheese

4 Cups Servings
  • 8 oz. sharp cheddar cheese grated
  • 8 oz. pepper jack cheese grated
  • 3/4 – 1 cup mayonnaise
  • 8 oz. cream cheese softened (very important to soften)
  • 1/4 – 1/2 tsp. ground cumin or to taste
  • 1 tsp. chili powder
  • 1 large jar diced pimentos (7 oz.)
  • 4 slices thin bacon cooked crisp and crumbled
  • 1 small can diced green chilis drain and blot excess moisture out on paper towel
  1. In a large bowl, blend cream cheese and mayonnaise until smooth.
  2. Stir in remaining ingredients.
  3. Chill.
  4. Use as a spread with crackers, tortilla chips or in celery sticks.
  5. Also very good as filing for grilled cheese sandwiches.
