Beef Vegetable Soup

  • 2lbs ground beef (80/20)
  • 32 oz tomato juice
  • 2 packs onion soup mix (Lipton’s)
  • 2 large potatoes diced
  • 1 large yellow onion diced
  • 2 carrots diced
  • 1 14.5 oz can each Lima beans, veg all, cut green beans, corn, green peas
  1. Cook ground beef with onion over med heat until done, drain.
  2. Add tomato juice and soup mix , stir until combined over medium heat.
  3. Add all canned vegetables including water.
  4. Add fresh potatoes and carrots.
  5. Stir until throughly combined.
  6. Cook over medium low heat 30 minutes without lid.
  7. Serve with your favorite cornbread recipe
